Well, it's getting to be that time of year again - the weather is getting cooler and the leaves are changing colors and starting to fall. We've already set the clocks back and are now back on standard time. Yep, looking forward to that big Thanksgiving Day meal - the one that will provide the best left-over turkey sandwiches for a week!
The tradition in our house is to get a big tom turkey and stuff it with this great sausage and herb stuffing, put it in the oven and let him roast for about 5 hours. The drippings make a great gravy once the wine is added for flavor. Then there's the creamed corn, mashed potatoes, candied yams, green bean casserole, and the rolls fresh out of the oven, all with a side of whole berry cranberry sauce!. Let's not forget the pumpkin pie, apple pie, coffee cake, and cheese cake! Talk about stuffed - I get stuffed thinking about it, but since it only comes once a year - well what can I say. We pass it around and share the wealth of our bounty and that really gives us something to be thankful for!
However, before the meal begins, we each take turns stating what we are thankful for. There's the roof over our heads, the food we are about to eat, the clothes on our backs and in our closets, the good health that we have, the friends and family we have, the vehicles we drive, good neighbors, the air we breath, the life we live. There really is a lot to be thankful for, even when times get tough (like now), we are thankful that we know we will make it through this crunch in our lives. Then again, we can be thankful we live in a free nation, that we have this wonderful freedom of expression and free enterprise. We really could go on and on - just stop for a moment and think about it. Life is wonderful and we are thankful to be a part of if.
